Christmas rush
It’s a perfect baking day as it’s looking very dreadful outside:
I’ve been getting ready for all the cookie baking about to ensue (28 dozen!) and so things will be a bit quiet until after the rush.
But I really wanted to share with my one reader two awesome recipes. One from Real Simple where every recipe I’ve made from there has been a winner. We had someone over for dinner and despite all the books that say to make something you’ve already made, we tried the Roasted chicken, apples, and leek recipe which turned out AMAZING and sooo moist and delicious. All it required was throwing in some ingredients and letting it roast for about an hour. For dessert, I made Laura Calder’s Rough Apple Galette which complimented dinner nicely. Again, really easy and tasty. I’m not much of an apple pie person and I’ve never made a galette, but I will be purchasing more apples to make this dish again…probably next week. The portion is also not huge which is great for 2 people.
Now back to making cookies…
